Apple, Cinnamon & Sultana Scones
 
 
Serves: 18
Ingredients
  • 2 ½ cups of self-raising flour
  • pinch of salt
  • 2 tablespoons of sugar
  • 1 tablespoon butter
  • ¾ cup of milk
  • 2 teaspoons of cinnamon
  • ½ cup of sultanas
  • 1 Granny Smith apple – (peeled and grated just before you use it)
Instructions
  1. Sift the flour and salt.
  2. Add the sugar and rub in the butter until the mixture looks like coarse crumbs.
  3. Make a well in the middle of the flour mixture and then add the milk, cinnamon, sultanas and freshly grated apple and work the mixture into a soft dough.
  4. Turn out onto a lightly floured board and knead lightly.
  5. Press or roll the dough out to about ½ inch thick and then cut into desired shapes.
  6. Place scones onto a lined baking tray and glaze the tops with milk.
  7. Bake at 200 °C (400 °F) for 15 – 20 minutes.
Notes
I made 18 scones using a 5 cm (2 inch) round cutter.
