Sprinkle Cake Mix Cookies
- 1 box (about 550g) of vanilla cake mix – mine was White Wings Angelic Vanilla Cake (97% fat free)
- 1 teaspoon of baking powder
- 2 eggs (large)
- ⅓ cup of canola oil
- ½ teaspoon of vanilla extract
- 1 cup of sprinkles
- Preheat oven to 180 °C (350 °F)
- Place the cake mix and the baking powder into a large mixing bowl and roughly combine.
- In a separate bowl, use a fork to whisk up the eggs, oil and vanilla.
- Pour the egg mixture into the dry cake mix and stir really well to ensure that all of the dry mix has been incorporated completely.
- Add the sprinkles and mix to combine – being careful not to over mix which might cause the sprinkle colour to dye the cookies.
- Place heaped teaspoonfuls of mixture onto a lined baking tray and then bake for 8 to 9 minutes.
- Allow to cool on baking tray for 3 – 5 minutes before transferring to a wire rack.
- Store in an airtight container.
