If you are looking for a tasty side to go with you summer salads you can’t go past this creamy pasta salad recipe. It’s very easy and so delicious!

Serves: 6 - 8
  • 125g of dry pasta
  • ½ a medium carrot grated
  • ¼ of a red capsicum finely diced
  • ¼ of a green capsicum finely diced
  • ¼ of a red onion finely diced
  • ½ cup of reduced fat mayonnaise
  • 3 tablespoons of lite sour cream
  1. Cook pasta according to the directions on the packet.
  2. Drain the pasta and then rinse it with cold water and drain again.
  3. Place the pasta into a large bowl and add the remaining ingredients and mix well.
  4. Can be served immediately but it is best when covered and allowed to chill in the fridge for a couple of hours before serving.
Nutritional information is calculated for 6 servings and using low fat mayonnaise and sour cream however you can use full fat mayonnaise and sour cream if you wish.
