Easy and Delicious Chocolate Chip Scones

This is the easiest recipe for chocolate chip scones that you will ever find. Plus they’re so soft and fluffy and packed with lots of yummy chocolate chips!

Ingredients
  • 3 cups of self raising flour
  • ½ cup of icing/powdered sugar
  • 1 cup of thickened/heavy cream
  • 1 cup of lemonade/soda pop (e.g. Sprite)*
  • 1 cup of milk chocolate chips
  • extra self raising flour for kneading (approx. ½ cup)
Instructions
  1. Preheat oven to 200 °C (400 °F) and line a baking tray or tin with baking paper - I use a 20cm x 30cm (8 x 12 inch) rectangular slice tin.
  2. Place flour, sugar, cream, and lemonade in a large bowl and mix to combine.
  3. Fold through chocolate chips.
  4. Turn the sticky mixture out onto a well-floured board and bring together/knead with extra flour until just smooth and no longer sticky.
  5. Use your hands to flatten the dough out to about 2 – 3 cm (1 inch) thick and then cut into rounds using a floured scone cutter.
  6. Place scones onto a lined baking tray so that they are just touching and then bake for 15 to 20 minutes.
  7. Scones are cooked when they are golden brown and can be easily pulled apart where they are joined.
  8. Remove from oven, cover with a tea towel and allow to cool for 5 minutes before serving.
Notes
* Sprite is called lemonade in Australia.
I have used sugar free lemonade and find that it works just fine.
Yield depends on thickness of dough and size of cutter.
Can be made ahead of time and frozen until needed. Allow to thaw at room temperature or warm using short bursts in the microwave.
