Description
If you are looking for a tasty side to go with you summer salads you can’t go past this creamy pasta salad recipe. It’s very easy and so delicious!
Ingredients
- 125g of dry pasta
- 1/2 a medium carrot grated
- 1/4 of a red capsicum finely diced
- 1/4 of a green capsicum finely diced
- 1/4 of a red onion finely diced
- 1/2 cup of reduced fat mayonnaise
- 3 tablespoons of lite sour cream
Instructions
- Cook pasta according to the directions on the packet.
- Drain the pasta and then rinse it with cold water and drain again.
- Place the pasta into a large bowl and add the remaining ingredients and mix well.
- Can be served immediately but it is best when covered and allowed to chill in the fridge for a couple of hours before serving.
Notes
Nutritional information is calculated for 6 servings and using low fat mayonnaise and sour cream however you can use full fat mayonnaise and sour cream if you wish.
