Description
This is a quick and easy vegetable curry that is so yummy it will be enjoyed by all the family. It is wonderfully creamy and packed with healthy vegetables. You will never miss the meat!
Ingredients
- 1 tablespoon oil
- 1 onion, chopped (sliced or wedges)
- 2 carrots, chopped
- 2 cups pumpkin, cubed
- ½ small cauliflower, cut up into florets
- 1 teaspoon of curry powder
- 1 packet of chicken noodle soup mix
- 1 cup of water
- 1 cup of frozen peas
- 1/3 cup of light sour cream
Instructions
- Heat oil in large fry pan and add the onion, carrot and pumpkin – fry until browned and slightly softened.
- Add cauliflower, curry powder, soup mix and water and stir thoroughly.
- Bring to the boil and then reduce heat and simmer covered for 15 minutes.
- Add peas and continue simmering for further 5 minutes.
- Stir in sour cream then serve with rice.
Notes
Can use 2 teaspoons of curry powder if you like more heat in your curry.
