I love a glass or two of bubbly of the alcoholic variety but sometimes you need a special occasion drink that is non-alcoholic. It’s my birthday this weekend and I will be catching up with family which includes my niece and nephew. Since they are not old enough for alcohol but are starting to get interested in adult drinks I thought that it would be the perfect time to break out my favourite mock Champagne recipe.
I love this drink because when I was growing up it was a wonderful treat that was only served on special occasions like birthdays and Christmas. We didn’t have soft drink very often in our house, which I am grateful for now because I love to drink plenty of water! I think it was because we didn’t have soft drink all the time that it felt like it was pretty special when we did. On some special occasions we would have soft drinks like Coke and Fanta but my favourite drink was a glass of this fruity mock champagne!
It is just pineapple and orange juice mixed with lemonade (soda pop) but it feels like you are having something special when you drink it. I still enjoy a glass of this at Christmas or other special occasions even if I can have alcohol. I guess it brings back memories of childhood celebrations. I’m definitely looking forward to having a glass or two this weekend!
It is also very refreshing on a hot day, just pop in a few ice cubes and you are all set!
- 1 litre of pineapple and orange juice (I use Golden Circle Pine Orange)
- 2 litres of lemonade (such as Sprite)
- Combine the two ingredients together in a large pitcher or jug and add ice cubes if desired.
- Serve chilled.
