Sprinkle Cake Mix Cookies

They are quick to mix, ready in minutes and super yummy!

If you are a regular reader of my blog you will probably already know that I love a quick and easy recipe. I often get the urge to bake on the spur of the moment. I will see an image on Pinterest – something that looks really yummy – and I will scroll straight to the ingredients list. If I have everything needed then I’ll really start to get excited as I move down to the method.

If a recipe has a long, complicated, or drawn out method then I will then probably just pin it for later. I’ll do complicated recipes for special occasions but for everyday stuff the easier the better – right?

I’ll probably stop for a millisecond and consider the calories involved and then I’ll decide to make it anyway! That’s what we have gyms and gardens for isn’t it – I love gardening but I also love that working in the garden allows me to burn some calories. I haven’t needed a gym since I took up gardening!

I got one of my sudden urges to bake the other day when I was visiting one of my favourite food blogs – Sally’s Baking Addiction. Seriously Sally has one of the best food blogs going around and all of her recipes look awesome. If you haven’t seen it you should really check it out!

Anyway I was drooling over some of Sally’s cookies when I happened to see a reference to cake mix cookies. I thought that can’t be right, Sally makes everything from scratch; she wouldn’t use a cake mix! But I was wrong Sally has several recipes for cake mix cookies.

Several cookies are laid out on a wooden table with multi-coloured sprinkles scattered around them.They all sound really good but the one that caught my eye was for her Confetti Cake Batter Cookies. These called for a packet of vanilla cake mix – which I had! The other ingredients were just staples that I normally have in the pantry; baking powder, eggs, oil, vanilla, and sprinkles. I had all these so I was in business.

I was super excited because I had found an easy recipe and I knew it would be great because it was one of Sally’s!

I dirtied two mixing bowls one to whisk up the eggs oil and vanilla, and then one where everything was mixed together. It was great there was no sifting of flour, no creaming anything, no chilling of dough – just very simple mixing and baking. Actually this recipe would be a great one for kids who are learning to cook!

For cookie lovers who want great cookies fast - these Sprinkle Cake Mix Cookies are perfect! They are quick to mix, ready in minutes and super yummy!

Serves: 48
Ingredients
  • 1 box (about 550g) of vanilla cake mix – mine was White Wings Angelic Vanilla Cake (97% fat free)
  • 1 teaspoon of baking powder
  • 2 eggs (large)
  • ⅓ cup of canola oil
  • ½ teaspoon of vanilla extract
  • 1 cup of sprinkles
Instructions
  1. Preheat oven to 180 °C (350 °F)
  2. Place the cake mix and the baking powder into a large mixing bowl and roughly combine.
  3. In a separate bowl, use a fork to whisk up the eggs, oil and vanilla.
  4. Pour the egg mixture into the dry cake mix and stir really well to ensure that all of the dry mix has been incorporated completely.
  5. Add the sprinkles and mix to combine – being careful not to over mix which might cause the sprinkle colour to dye the cookies.
  6. Place heaped teaspoonfuls of mixture onto a lined baking tray and then bake for 8 to 9 minutes.
  7. Allow to cool on baking tray for 3 – 5 minutes before transferring to a wire rack.
  8. Store in an airtight container.

If you look closely at my cookies you will notice that they have some small brown flecks in them. I actually had only half a cup of rainbow sprinkles left so I used some chocolate sprinkles as well and they still look (and taste!) great.

My cookies took on a little bit of a golden colour but I think that might be due to the brand of cake mix. I don’t think that they were overcooked. They are so soft and yummy – they were a big hit with my family.

They were all about 6 – 7 cm (2.5 – 3 inches) across and I think that is a nice size cookie. If they are not too big you can justify having more than one 🙂

Sally also has a devil’s food cake version of this cookie and I plan to try it out next!
