What is it with scones in the winter time? When it is cold and wet outside my craving for scones kicks in! It might be because when I was a kid my mum used to make up a batch of scones for afternoon tea on a wet winter’s day! Winter and scones just seemed to be made for each other.
Nothing has changed much for me in that respect. I usually make the most of the cold weather and will often whip up a batch of scones to have for a tasty snack.
Lately I have been indulging my love of scones even more by eating them for breakfast! I made up some plain scones recently and just loved eating them for breakfast with raspberry jam.
When searching on Pinterest for some scone inspiration I came across a recipe for Apple Cinnamon Scones, at Created by Diane that sounded wonderful. While my recipe uses my own basic scone mix I do have to thank Diane for inspiring me to use the apple and cinnamon flavours!
I shared the recipe idea with my mum and she suggested that I also add some sultanas and I have to say that that was a great idea. The resulting Apple, Cinnamon and Sultana Scones turned out wonderful.
I started with a basic plain scone recipe mix but I added some sultanas, grated apple and cinnamon as I was working the mixture into a dough. They were easy to make, I just had to make sure that I grated the apple right before I needed it so that it didn’t have a chance to go brown. I chose to grate the apple rather than dice it so that it would incorporate into the dough more easily.
They turned out lovely and the smell going through the house as they cooked was divine. They were only out of the oven for a few minutes before we decided we should sample them to make sure they were ok, they didn’t disappoint
There was a few left when we were finished so I was able to enjoy them for breakfast the next day too!
- 2 ½ cups of self-raising flour
- pinch of salt
- 2 tablespoons of sugar
- 1 tablespoon butter
- ¾ cup of milk
- 2 teaspoons of cinnamon
- ½ cup of sultanas
- 1 Granny Smith apple – (peeled and grated just before you use it)
- Sift the flour and salt.
- Add the sugar and rub in the butter until the mixture looks like coarse crumbs.
- Make a well in the middle of the flour mixture and then add the milk, cinnamon, sultanas and freshly grated apple and work the mixture into a soft dough.
- Turn out onto a lightly floured board and knead lightly.
- Press or roll the dough out to about ½ inch thick and then cut into desired shapes.
- Place scones onto a lined baking tray and glaze the tops with milk.
- Bake at 200 °C (400 °F) for 15 – 20 minutes.
