I really like zucchini, so last spring I decided to plant some of my own in the vegetable garden. My Mum warned me that they were good producers so I only planted four seeds in the hope that I would get a couple of plants. I ended up with three zucchini plants and boy have they produced loads of zucchinis! It feels like I have spent much of my time over summer thinking about possible zucchini recipes and different ways to cook zucchini!
I like them plain so we have had plenty of plain steamed zucchini and since I was given a veggie twister for Christmas we have also been able to make zoodles (zucchini noodles!). I love how quickly you can turn the zucchini into cute looking noodles; we have enjoyed eating them with salads or with a nice bolognaise sauce. I have also made some Double Chocolate Zucchini Muffins a while ago and they were awesome!
Even though we are now in February the zucchinis are not showing any sign of slowing down so I thought that I would check out some more ideas for tasty zucchini recipes. I knew that I had pinned lots of zucchini recipes on Pinterest over the last couple of years so I decided to go back and have a look at what I had pinned. Many of them look really scrumptious but I can only share a few. So I am going to share 10 zucchini recipes that I want to try (and you should too) before the end of summer.

Let’s start with a recipe for Parmesan Zucchini Sticks from iFoodreal. I love parmesan cheese and this looks like such an easy way to prepare some yummy oven roasted zucchini.
Speaking of parmesan cheese this recipe for Zucchini Parmesan found at Gimme Some Oven sounds nice. Actually it looks like some very tasty cheesy zucchini because it has parmesan cheese and mozzarella cheese!
These Baked Zucchini Fries with Ranch Dipping Sauce that I found at Yummy Healthy Easy are also on my to do list. Or should that be my to make list? Anyway I haven’t tried zucchini fries before and I intend to rectify that very soon!
These Zucchini Fritters that I saw at Damn Delicious also got my mouth watering. I’ve triend vegetable fritters with zucchini in them but I have never had zucchini fritters before.
I also had to include this Delicious Zucchini Lasagna from Laura at The Turquoise Home. I love lasagne and I love zucchini so I just know I will love this recipe!
Now we all know that zucchini goes really well in a savoury recipe but I don’t want to overlook the yummy sweet zucchini recipes out there!
Like these Zucchini Cinnamon Apple Muffins from Give Recipe. I love apple muffins because they are so versatile. They can be breakfast, or dessert, or they can be a snack!
This next recipe is one that I don’t even remember pinning. I obviously didn’t have loads of zucchini in the house that day! Zucchini cookies, yes that’s right cookies! And they’re not just any cookies they are Zucchini Monster Cookies from Back for Seconds. They even have M&M’s – yum!
What about these Cinnamon Frosted Zucchini Bars from Aimee at Shugary Sweets, don’t they look awesome? I don’t know about you but I would enjoy eating a couple of those bars for breakfast!
Another recipe that I am determined to try while I have excess zucchini is this Chocolate Zucchini Bread from Claire at Claire K Creations. It looks so moist and delicious.
Finally I couldn’t have a list of zucchini recipes with without including brownies! These Chocolate Zucchini Brownies from Erin at Texanerin Baking are too good to resist. These brownies are extra healthy because they have zucchini and whole grains.
I can’t believe that there are so many yummy ways that you can cook with zucchini. I’m looking forward to trying out these yummy zucchini recipes!
