The weather has been so nice lately. We are now approaching the end of summer and things are starting to cool off a bit. We have had a run of days that have been around the mid-twenties and perfect for sitting outside soaking up the sun.
I have even been enjoying having my breakfast outside on the veranda these last couple of weeks. It’s been wonderful sitting outside reading the paper while the birds are singing in the trees. I will be savouring my mornings like this, too soon the weather will change and it will be too cold to have breakfast outside 🙁
I recently came across a slice recipe that was just right for a summer breakfast treat. Actually the recipe came from blog that I have only recently discovered. The blog is called A Beach Cottage and the recipe is for an Easy Hazelnut & Honey Slice (this blog seems to have disappeared, so the link doesn’t work anymore). The recipe really took my fancy because it sounded super easy. Mix everything together, spread mixture into a lined tray, and bake. That is my kind of recipe!
I didn’t have any hazelnuts so I turned to one of my favourite flavour combinations and added walnuts and raisins instead. So I have renamed my version of the recipe Easy Walnut Raisin Slice! I think that the combination of oats, raisins and walnuts make it a super healthy and delicious breakfast. I will definitely be enjoying this easy walnut raisin slice for breakfast quite often now!
If you want to make it a bit naughty or you don’t like dried fruit then you could use chocolate chips instead of the raisins. I might just try a chocolaty version next time!

Description
Mix all the ingredients together, press into a tray, and then bake! This easy walnut raisin slice is so simple – it is my new favourite slice recipe!
Ingredients
- 1 cup self-raising flour
- 1 cup oats
- ½ cup of roughly chopped walnuts
- ½ cup of raisins
- 1/2 cup caster sugar
- 1 cup desiccated coconut
- 1/2 cup (125g) butter melted
- 1 egg
- 1/4 cup honey
Instructions
- Preheat oven to 180 °C (350 °F).
- Prepare an 8” x 12” x 1.5” slice tin by lining with baking paper (greasing sides if necessary).
- Combine all ingredients together in a large mixing bowl and mix well.
- Press mixture into slice tin and use the back of a spoon to level the top.
- Bake for 20 – 25 mins; slice will have risen and turned golden brown when cooked!
- Allow slice to cool in the tin until just warm, and then carefully lift out onto a wire rack to cool completely before slicing.
Notes
When lining your tin make sure that you have some excess baking paper sticking up over the sides – this will make it easier to lift out of the tin after baking.
What would be 125g be in English measurement?

I made this today . Lovely I substituted caster sugar for less stevia .. I think the honey sweetens it up fine and no need for too much extra really . I also used wholemeal flour and an ancient grain oats that I have to make it even healthier. Thankyou
Just a further comment re how I made the raisin and walnut slice .. I also used some rice and oat flour in that cup of flour (instead of just the wheat flour )

Hi Kaylene, I have this same recipe from a friend, but it doesn’t include honey, so I’ll have to try your recipe now. Also, not that it was in the recipe that I was given, but I decided to add 1 Tbsp. lemon juice and 2 tsps. lemon zest just to add another flavour into the slice and it turned out lovely. In fact I have to contain myself to stop eating it, it’s that nice.

This is a really good recipe but needed to add additional fluid to make it bind together. I added an extra egg, some more honey and butter and a small amount of milk. It came out really well and is delicious. Thank you for the recipe will definitely use again
Oh that’s funny that you had to add more ingredients Janet, I’ve made it several times with no issues. As long as it turned out okay in the end though, that’s the main thing!

I have unsubscribed you from that post, so you shouldn’t keep getting those emails now!
I found this made dry, uninteresting slices. I would not make it again. Only cooked it the least of the baking time (20 mins) but it has no chewy softness to them. Disappointed.

Can these be frozen or if made ahead, how long will they keep?
Hi Ellen, I don’t think that I have ever frozen this slice, but I am sure that you could. Based on my experience with freezing similar bakes, it should keep for 4 to 6 weeks if you freeze it in an air tight container.
