With only a week to go until Anzac Day I thought that I would share a recipe that contains the same flavours as an Anzac biscuit. However, I wanted to make a slice because I thought that it would be a bit quicker than making biscuits. With this slice you only have to press the mixture into a baking tray and cook. You don’t have to worry about making individual biscuits.
Just to be different though I decided to change things up a bit by adding some nuts. For this recipe I added walnuts to give it a delicious nutty flavour and to add a bit of crunch. The result was a slice that contained the distinct flavours of coconut, oats, and golden syrup but with some nutty flavour from the walnuts.
The original recipe was cut out of a local newspaper a few years ago and it has become a favorite in our family ever since. It didn’t have walnuts in it though. I am a bit of a fan of using walnuts in baking, and I had some in the pantry, so I thought why not add some! I’m glad I did too because this slice is made even tastier with the added walnuts.
These days I prefer to make recipes like this nutty oat slice rather than a biscuit because it is so easy. Instead of dividing the mixture up to make biscuits you only have to press the whole mixture into a slice tin and then cut it into slices after it is cooked!

Description
This Nutty Oat Slice is soft and chewy and has all the flavors of an Anzac biscuit. The addition of walnuts however takes this slice to the next level!
Ingredients
- 1 cup of rolled oats (90g)
- 1 cup of plain flour (150g)
- 3/4 cup of sugar (135g)
- 3/4 cup of desiccated coconut (60g)
- 1/2 cup of chopped walnuts (50g)
- 1/2 cup butter (125g)
- 2 tablespoons of golden syrup
- 1 level teaspoon of bi carb soda
- 3 tablespoons of boiling water
Instructions
- Preheat oven to 180 °C (350 °F)
- Prepare an 8” x 12” x 1.5” slice tin by lining it with baking paper (leave some overlapping the sides, so it is easier to get out after it is cooked).
- Combine oats, flour, sugar, coconut, and walnuts in a large mixing bowl and stir to combine.
- In a small saucepan heat butter and golden syrup over low heat and stir until butter is all melted.
- Combine bi carb soda and boiling water and add this to the butter mixture.
- Add butter mixture to the dry ingredients and stir to combine.
- Press mixture into the prepared tin and bake for 20 – 25 minutes or until golden brown.
- Cool in tin for 30 minutes before cutting into slices.
