When you are cooking, one of the most useful things to know would have to be when it is possible to use a substitute ingredient if you have run out of something. It always happens when you are in a hurry, you are all set to whip up a quick meal or make a batch of your favourite treats and then you suddenly realise that you have run out of one of the key ingredients! This is when the ability to make your own substitute ingredients will really come in handy.

If you have ever been just about to make up a delicious batch of cookies and discovered that you don’t have any brown sugar then the following links could be a godsend!
Making Your Own Brown Sugar
I was making cookies the other day when I realised that I had run out of brown sugar. I initially found a couple of links that showed how to make brown sugar yourself. I decided to go with the one I saw at Joy the Baker as it seems to be the easiest.
All I had to do was use a fork to mix up one tablespoon of molasses with one cup of white sugar and I got a great result. If you want darker brown sugar just add more molasses!
I also saw over at Food.com that you can use a food processor to make brown sugar too!
Making Brown Sugar in Larger Batches
If you use a lot of brown sugar and want to make up a larger batch then the following video link shows you the quantities and method that you can use to make up a large batch in an electric mixer.

Finally I came across the video below which showed brown sugar being made using a mini blender type mixer to blend the sugar and molasses. I don’t actually have one of these but I thought it was a great idea for those that do.
