Munchies Recipe – Childhood Favourite!

There is something so right about a biscuit or cookie that includes rolled oats, coconut and golden syrup. I just can’t resist this favour combination. The recipe that I am sharing today is for cookie-like snacks called Munchies, which contain all three of these ingredients.

They were a regular treat when I was a kid. My brother and I would get home from school and Mum would have a batch of Munchies freshly baked! We used to love watching our favourite cartoons while snacking on these home baked goodies.

I can’t believe that I have let it go so long before getting around making a batch myself. Mum actually suggested I make some recently when I was flipping through recipe books trying to choose something.

I am so glad that I did because they are very easy to make and these homemade treats are far nicer than any biscuit or cookie that you might buy! They were just what I was looking for – slightly crunchie on the outside but with a soft, melt-in-your-mouth centre – yum!

I made my munchies quite small by using teaspoonfuls of the mixture but you could easily make bigger munchies if you used dessertspoonfuls. I chose to make small ones because I wanted to be able to eat more than one and not feel guilty.

When I plugged the ingredient into My Fitness Pal I found that each Munchie has 72 calories (when using teaspoonsfuls of mixture).

If you are looking for a kid friendly recipe I can highly recommend this one. They are very easy to make and so hard to resist!

Description

As a family favourite these Munchies are easy to make and hard to resist. You can’t beat the favour combination of rolled oats, coconut and golden syrup.


Ingredients

  • 1 cup of plain flour
  • 1 cup of sugar
  • 1 cup of rolled oats
  • 1 cup of coconut
  • 125g (1/4 lb) butter
  • 1 tablespoon of golden syrup
  • 1 teaspoon of bicarbonate of soda
  • 5 tablespoons of boiling water


Instructions

  1. Preheat oven to 180 °C (350 °F)
  2. Mix the flour, sugar, rolled oats, and coconut together in a large mixing bowl.
  3. Melt the butter using short bursts in the microwave.
  4. Add golden syrup, bicarbonate of soda, and the boiling water to the butter and stir to combine.
  5. Add the butter mixture to the dry ingredients and mix well.
  6. Place teaspoonfuls of mixture onto a lined baking tray – use your hands to shape the mixture into small balls.
  7. Bake for 10 – 12 minutes or until golden brown.
  8. Cool on tray for 5 minutes then transfer to a wire rack.
