Choc Mint Ice Cream Topping

Choc Mint Ice Cream Topping - thelinkssite.comNow that we are finally into spring I am beginning to crave warmer weather desserts. Don’t get me wrong the weather is nowhere near summery yet but it is possible to feel the change in the seasons.  Last month I shared an easy lemon cheesecake recipe that is a perfect summer dessert but I have also been craving a really quick summer dessert fix. That is where this Choc Mint Ice Cream Topping comes in handy.

I am a big fan of the Ice Magic type ice cream toppings; you know the ones that are liquid as you pour them over ice cream and then they set hard – like magic! When I was a kid my nana would give us ice cream with Ice Magic as a treat when we visited. We used to think it was so cool to drizzle the chocolate topping over our ice cream, wait a few seconds and then give it a tap with our spoons to check if it had set.

Last summer I tried some of the mint flavoured Ice Magic and really liked it. Actually I have to admit that I found it hard to resist. I love my chocolate topping but the mint flavoured stuff was sooo good!

I recently came across a homemade version of this magic style topping by Jenny at Picky Palate. It looked easy so I thought that I would try making a mint flavoured version. The result is a yummy choc mint ice cream topping that has only three ingredients and that you can make up in just a couple of minutes. All you need is some dark chocolate melts, vegetable oil, and peppermint essence.

The flavour is really nice (I can eat it by itself!) although it does set a bit harder on ice cream compared to the store bought version – but is still really good! I have to admit I will probably still by some Ice Magic over summer but it is also great to be able to make up a small batch of homemade topping whenever I get a craving!

Choc Mint Ice Cream Topping

Serves: 4
Ingredients
  • ½ cup of dark chocolate melts
  • 2 tablespoons of vegetable oil (I used canola)
  • ½ - 1 teaspoon of peppermint flavouring extract
Instructions
  1. Place chocolate melts in microwave safe container and heat on high for 30 seconds (if required heat further in 10 second bursts until chocolate is melted).
  2. Stir chocolate thoroughly so it is smooth and has no lumps.
  3. Add the oil and peppermint and mix well.
  4. Drizzle over ice cream as required.
Notes
Will store at room temperature for a few days.
